Valdobbiadene hills (Veneto)
The grapes used for this wine are coming from a single vineyard, located in Soligo at 367mt above sea level: it’s name is Vigna San Gallo.
With an incline of almost 38%, its soils are characterized by the strong presence of calcareous conglomerates with iron and aluminum silicates. South exposure.
Complete, sown ground cover. On biological conduction, no pesticides no herbicides.
Manual harvesting using small 20 kg crates starts in the early September.
Soft pressing with separation of the flower must. Static decantation of 18-24 hours. Fermentation in steel tanks with a pied de cuvée produced by our own grapes. Maturation in steel and cement tanks with batonnage. Afterwards it comes the refermentation that takes place according to the Martinotti method: the secondary fermentation starts in autoclaves thanks to selected yeasts and it lasts 40 days.

TASTING NOTES AND FOOD PARING
A wine with a contrasted soul between seriousness and lightness. Fresh and savory taste combine with hints of wild flowers and ripe fruit. It perfectly matches with sea shrimps and fish based dishes in general.
