Calcareous-clayey soil. South West exposure. Altitude 250-350 m asl.
The grapes are crushed, pressed and naturally clarified. The juice is stored without sulfites, at low temperature in order to naturally prevent fermentation. The winemaker add yeast and the temperature is increased to 12/14 °C. Alcoholic fermentation occurs in stainless steel autoclave to preserve natural CO2. There is no malolactic fermentation which preserves
acidity, varietal fruit character and freshness.

TASTING NOTES AND FOOD PARING
Fine and abundant perlage, straw yellow color with greenish reflections. Aromatic aroma typical of the grape, very persistent, with hints of fresh fruit. Very delicate and sweet on the palate, with good acidity.
Desserts, especially those based on fresh or dried fruits and cheeses.
