The vineyards are located on a hill at 225 meters above sea level. The soils are typical of the Monferrato: clayey and chalky. East exposure.
The harvest takes places in the first and second half of September ,in order to make sure that grapes have reached the needed level of on-plant maturation that can give the traditional fruity and white flowers aromas. The harvest is by hand, in baskets, with grape selection in the cellars.
Soft-pressing of the whole grapes with a pneumatic press. Then the juice it is settled for a night to make it slowly decant. The fermentation takes place in steel tanks at controlled temperatures (15/16 C).

The product can gently evolve during the years, despite this we recommend to enjoy it till 2 years after the harvest in order to preserve all of its characteristics.
TASTING NOTES AND FOOD-WINE PARING
Straw yellow color with fresh floral, citrus and melon aromas and hazelnut notes. Wine with dry and medium body and fresh acidity. Well balanced, elegant with good complexity and long finish. Suitable both for the aperitif and a proper meal. Perfectly paired with salmon and fatty fishes in general.
